Chit Chat Mousse

Taking less than 15 minutes and $20 to make, these moreish desserts are as easy as they are delicious!

Ingredients
  • 1 packet of Griffin's Chit Chat biscuits
  • 2 cups (500ml) Cream
  • 1/3 cup Cream Cheese, softened
  • 1 tsp Vanilla Essence
  • 1/2 cup + 1 Tbsp Icing Sugar 
  • 50g Chocolate 
Instructions
  1. Leaving 2 biscuits aside for decoration, roughly crush the Chit Chat biscuits.
  2. In a large bowl, cream together the vanilla, cream cheese, and 1/2 cup icing sugar until light and fluffy. 
  3. Add 1 + 1/2 cups of cream to the cream cheese mixture and beat again until it forms soft peaks. 
  4. Fold the crushed biscuits through the cream mixture and evenly divide into 4 serving glasses.
  5. In a separate bowl, whip the remaining 1/2 cup of cream and 1 Tbsp of icing sugar to soft peaks. 
  6. In each glass, dollop the cream on top of the mousse and decorate with half a Chit Chat biscuit and grated chocolate. 
  7. Allow the mousse to set in the fridge for an hour before serving.
