Chit Chat Neapolitan Slice

Ingredients
For the base:
- 1 packet of Griffin’s Chit Chat biscuits
- 50g Butter, melted
For the filling:
- ½ cup Boiling Water
- 3 tsp Gelatin Powder
- 395g tin of Condensed Milk
For the topping:
- 1 packet of Strawberry Jelly
- 1 tsp Gelatin Powder
Instructions
- Grease and line a square tin, being careful to leave enough baking paper on the sides to help you remove it from the tin once set.
- To make the base, crumb the Chit Chat biscuits in a food processor and blitz until breadcrumb texture. Add the melted butter and blitz again until combined.
- Press the base mixture into a rectangular tin. Place in the fridge to cool while you prepare the filling.
- To make the filling: In a large bowl, combine the boiling water and 3 teaspoons of gelatine. Stir until the gelatine dissolves before adding the condensed milk. Whisk to fully combine and pour the mixture onto the refrigerated base.
- To make the topping, follow the jelly packet instructions to prepare the jelly. Whisk in 1 tsp of gelatine powder and allow the mixture to cool to room temperature before pouring onto the chilled slice.
- Refrigerate again for a few hours until the jelly is fully set.
- Remove the slice from the tin and cut into squares.
- Enjoy!
