Chocolate Mint Slice

With smooth peppermint filling, dark chocolate, and a Griffin's Roughs biscuit base, this slice is utterly delicious and can be made for less than $20!

Ingredients

For the base:

  • 1 packet of Griffin’s Roughs biscuits
  • 50g Butter, melted

 

For the filling & topping:

  • 2 1/4 cups Icing Sugar
  • 20g Butter, melted
  • 1/2 tsp Peppermint Essence
  • 3-4 Tbsp Milk
  • 200g Dark Chocolate Buttons

Instructions
  1. To prepare the base, crush the packet of Griffin's Roughs in a food processor until a fine crumb forms. Add 50g melted butter and process again until fully combined.
  2. Press the base into a lined tin and refrigerate for 30 minutes.
  3. To make the filling, sift the icing sugar into a bowl. Combine with 20g melted butter, peppermint essence, and half of the milk. Mix to form a spreadable paste, adding more milk as needed. Spread the filling evenly over the base.
  4. Melt the chocolate in 30 second increments in the microwave and spread over the peppermint layer. Refrigerate until firm before cutting into pieces.
