Coconut & Cranberry Truffles
Made with Griffin's Vanilla Wine biscuits, these scrumptious truffles can be whipped up for less than $20!

Ingredients
- 1 packet of Griffin's Vanilla Wine biscuits
- 3/4 cup + 2 Tbsp Dessicated Coconut
- 1/3 cup Dried Cranberries
- 395g Sweetened Condensed Milk
- 290g Dark Chocolate Melts
Instructions
- In a food processor, crush the Vanilla Wine biscuits until they reach a bread crumb consistency.
- Add 3/4 cup coconut and the cranberries and condensed milk to the processor and blitz again until the mixture comes together.
- Roll tablespoons of the mixture into balls and place in the fridge to chill for 10 minutes.
- Melt the chocolate over a double boiler or in a microwave in 30 second increments.
- Dip the truffles into the melted chocolate before sprinkling with the remaining 2 tablespoons of coconut.
- Place back in the fridge for a further 15 minutes or until set.
Makes approximately 15 truffles.
