Coconut & Cranberry Truffles

Made with Griffin's Vanilla Wine biscuits, these scrumptious truffles can be whipped up for less than $20!

Ingredients
  • 1 packet of Griffin's Vanilla Wine biscuits 
  • 3/4 cup + 2 Tbsp Dessicated Coconut
  • 1/3 cup Dried Cranberries
  • 395g Sweetened Condensed Milk 
  • 290g Dark Chocolate Melts

Instructions
  1. In a food processor, crush the Vanilla Wine biscuits until they reach a bread crumb consistency. 
  2. Add 3/4 cup coconut and the cranberries and condensed milk to the processor and blitz again until the mixture comes together. 
  3. Roll tablespoons of the mixture into balls and place in the fridge to chill for 10 minutes. 
  4. Melt the chocolate over a double boiler or in a microwave in 30 second increments. 
  5. Dip the truffles into the melted chocolate before sprinkling with the remaining 2 tablespoons of coconut.
  6. Place back in the fridge for a further 15 minutes or until set. 

Makes approximately 15 truffles.
