Toffee Pops Ice Cream

This Toffee Pops ice cream is rich, ultra creamy, and super easy!

Ingredients
  • 200g Milk Chocolate, chopped
  • 395g tin of Sweetened Condensed Milk
  • Pinch of Salt
  • 1 teaspoon Vanilla Essence
  • 500ml Cream
  • 1/2 cup Caramel
  • 1 packet of Griffin’s Toffee Pops biscuits, chopped

Instructions
  1. Melt the chocolate in the microwave in 30 second bursts.  
  2. In a large bowl, fold together the melted chocolate, the condensed milk, salt, and vanilla.
  3. In a separate bowl, whip the cream to stiff peaks.
  4. Add 1/3 of the cream to the chocolate mixture, mixing together. Gently fold through the rest of the cream until just combined.
  5. Add 1/3 of the ice cream mixture to a 2-litre loaf tin. Drizzle over some caramel, and add 1/3 of the crushed Toffee Pops. Repeat 2 more times until all the cream mixture, caramel, and Toffee Pops are distributed.
  6. Cover the ice cream and place in the freezer overnight.
  7. Once set, scoop and enjoy!
