Ginger Crunch

This no-bake ginger crunch made with Griffin's Gingernuts is packed full of flavour!

Ingredients

For the base:

  • 1 packet of Griffin's Gingernuts biscuits
  • 60g Butter
  • 1/3 cup Sweetened Condensed Milk

 

For the icing:

  • 60g Butter
  • 2 Tbsp Golden Syrup
  • 1 3/4 cup Icing Sugar
  • 2 Tbsp Ground Ginger

Instructions
  1. To make the base, crush the Gingernuts to a fine crumb in a food processor.
  2. Melt together the condensed milk and 60g butter before pouring in with the biscuits and processing again until combined.
  3. Press the base mixture into a lined tin and place in the fridge whilst you prepare the icing.
  4. To make the icing, melt together the golden syrup and 60g butter in the microwave. 
  5. Sift the icing sugar and ground ginger into the golden syrup mixture and stir together until smooth.
  6. Spread the icing evenly over the base and place back in the fridge for an hour or until set.
  7. Slice into pieces and enjoy!
