Lemon Krispie Slice

Satisfy your afternoon craving with this quick and delicious slice.

Ingredients

For the base:

  • 2 packets of Griffin’s Krispie biscuits
  • 1 ½ cup Rolled Oats
  • ½ cup Dessicated Coconut
  • 395g tin of Sweetened Condensed Milk
  • 125g Butter, melted
  • Zest of 3 Large Lemons
  • 1 tbsp Lemon Juice
  • ½ tsp Salt

 

For the icing:

  • 2 cups Icing Sugar
  • 80g Butter, melted
  • 3 tsp Lemon Juice
  • 2 tsp Hot Water

Instructions
  1. Grease and line a 20cm square tin with baking paper.
  2. In a food processor, pulse the biscuits to a fine crumb. Add the remaining base ingredients and pulse again until the mixture is combined, scraping down the sides as needed.
  3. Firmly press the mixture into the lined tin and place in the fridge to set.
  4. While the base is in the fridge, make the icing by adding the icing sugar, butter, and lemon juice to a bowl. Whisk to combine.
  5. Add hot water to the mixture as necessary until you have a smooth, thick icing. Spread the icing over the slice evenly and decorate with sprinkles of lemon zest.
  6. Refrigerate again for 2 hours until set.
  7. Cut into slices and enjoy!
