Lemon Krispie Slice
Satisfy your afternoon craving with this quick and delicious slice.
Ingredients
For the base:
- 2 packets of Griffin’s Krispie biscuits
- 1 ½ cup Rolled Oats
- ½ cup Dessicated Coconut
- 395g tin of Sweetened Condensed Milk
- 125g Butter, melted
- Zest of 3 Large Lemons
- 1 tbsp Lemon Juice
- ½ tsp Salt
For the icing:
- 2 cups Icing Sugar
- 80g Butter, melted
- 3 tsp Lemon Juice
- 2 tsp Hot Water
Instructions
- Grease and line a 20cm square tin with baking paper.
- In a food processor, pulse the biscuits to a fine crumb. Add the remaining base ingredients and pulse again until the mixture is combined, scraping down the sides as needed.
- Firmly press the mixture into the lined tin and place in the fridge to set.
- While the base is in the fridge, make the icing by adding the icing sugar, butter, and lemon juice to a bowl. Whisk to combine.
- Add hot water to the mixture as necessary until you have a smooth, thick icing. Spread the icing over the slice evenly and decorate with sprinkles of lemon zest.
- Refrigerate again for 2 hours until set.
- Cut into slices and enjoy!
