Thins Chocolate Mousse

Light, fluffy, and oh so good, this chocolate mousse made with our Griffin’s Thins has your next dessert sorted!

Ingredients
  • 1 packet of Griffin’s Choc Thins, crushed
  • 500ml Cream
  • 250g Milk Chocolate, chopped
  • 1 Tbsp Icing Sugar
  • 1 tsp Vanilla Essence

Instructions
  1. Heat 150ml of the cream in a saucepan over a medium heat until it begins to bubble.
  2. Add your chopped chocolate to a large heatproof bowl and pour the heated cream over the chocolate. Allow to sit for a few minutes before whisking until the mixture becomes fully combined and silky. Leave to cool to room temperature.
  3. In a separate bowl, whisk the remaining 350ml of cream, along with the vanilla and icing sugar, to stiff peaks.
  4. Add 1/3 of the cream mixture into the cooled chocolate mix, folding to combine. Gently fold in the remaining cream mixture.
  5. Add 1 tablespoon of crushed Thins biscuits to the bottom of each mousse glass and pour in roughly 2 tablespoons of mousse. Repeat 2 more times or until the glasses are full, and place in the fridge to chill for at least one hour.
  6. Enjoy!
